Saturday Morning Cookin'

So, every Saturday morning, I love to make a yummy breakfast for me and Tyler to enjoy. For anyone who knows the Kloven's, they know we loooooove eating food and I loooove making delicious food. So, this week, I decided to get my hands dirty and make homemade cinnamon rolls, cinnabon style, but way less fat. Don't get me wrong, I know some fat makes food taste great, but in almost everything I cook, I cut the sugar and fat way down or substitue the butter for healthier options like canola oil.

So, for all you go-getters out there, here's the recipe I've created. Just know, it's going to take some time, but the results are worth every bit of effort.

Cinnamon Rolls
serving size: 1 cinnamon roll
serves: 6

For dough:
1/2 cup milk
1 egg
5 tbs. butter
2 cups flour
1/2 tsp. salt
1/4 cup sugar
2 1/4 tsp. rapid rise/instant yeast

For Filling:
1 tbs. butter, melted
1 1/2 tbs. cinnamon
1/2 cup brown sugar, not packed

For Topping:
2 oz. low fat/nuefchatel cream cheese, softened
2 tbs. butter, softened
1/2 cup powdered sugar
1/4 tsp. vanilla extract
pinch of salt
Combine milk and butter in a microwave safe dish, and microwave until warm to the touch (about 45 seconds). In a seperate bowl add the whisked egg and slowly add the warmed milk/butter mixture while constantly whisking. In a large bowl combine the flour, salt, sugar and yeast. Whisk to combine and make a well in the center of the flour. Add the liquid to the center of the well and fold the wet ingredients into the dry ingredients. The dough should form a shaggy consistency. Place dough on a floured surface and knead for about 5-10 minutes, or until dough is pliable and will bounce back if you press your finger into it. Place the dough in an oiled bowl. Roll the dough around in the bowl to coat with oil as well . Place dough in a warm area with a damp cloth over the bowl for 2 hours or until doubled. (I set my oven to 200 degrees while I was making the dough and then turned the oven off before I put the dough in to rise)

Place risen dough on a floured surface and let rest for 10 minutes.
Roll dough out to a rectangular shape about 8 by 12 inches.
Brush dough with the melted butter. Combine cinnamon and brown sugar in a small bowl and sprinkle mixture evenly over the dough.

Roll the dough from the shorter side.
Cut the dough in 6 equal sections and place cinnamon rolls in a 8x8 prepared baking dish. Cover with a cloth and let rise for another 20 minutes.
Set oven to 400 degrees and bake for 20 minutes. Meanwhile, combine cream cheese and butter in a mixer. Once combined, add powdered sugar, vanilla and salt.
Place the cream cheese mixture in a plastic bag and cut the corner of the bag. Pipe icing over the hot cinnamon rolls and serve immediately!
